Easy 9 x 13 Spiced Meatloaf

Hello there!
I wanted to share an easy and tasty way to make meatloaf.
I used a 9x 13 baking dish to bake it. You can use any dish that you want even muffin tin.

The recipe is easy and requires a few ingredients that I found in my fridge and pantry.

Ingredients:

2 lb. ground meat (any will work)
1/2 cup old-fashioned oats
1 small onion, chopped
1 celery stalk
2 eggs
1/4 cup low-sodium soy sauce
1 tablespoon mustard (any will work)
1 tablespoon hot sauce (any will work)
1 tablespoon italian salad dressing
black pepper
spices of your choice ( I used mrs. Dash- onion and herb, and garlic and herb)
water

1) Mix all of the dry ingredients together.
2) In separate bowl mix all wet ingredients together. 
I believe I added some water too, but not more than 1/4 cup.
3) Combine the two mixtures together and spread it into any pan that you have.
4) Bake it till done in pre-heated to 375F oven.
5) You can spread some ketchup on top and bake for 5 more min, but I didn’t have anh so I skipped it.

Let it cool, slice it into butterfly shape and enjoy eating it.
Hahaha jusk kidding about the butterflies! :)

It came out really good and it was father and husband approved! :)
It was gone so fast that I couldn’t snap a good looking picture. But here’s one.

* if the meat mixture is too liquidity- add more oats.
* if the meat mixture is too dry and thick- add more water.
* be careful with added salt due to soy sauce is already salty.

Quick, Easy and Cheesey Breakfast Eggs In A Mug

Hello there! :)

In this chilly Chicago morning I want to offer you a quick and warm breakfast.
I made these microwave eggs a couple of times and I think that this is just a genius idea.
I saw this method of cooking in a health magazine, advertising eggs for breakfast in general.  The photoshoped picture looked so good, I decided to try it.

All you do is spray your coffee mug with some cooking spray. Crack the eggs in the mug. The first time I used 2 eggs. The second time I used 1 whole egg and 2 egg whites. Sprinkle some cheese and mix well with a fork. I put some extra cheese on top once it was cooked.
I would recommend NOT to fill the mug more than one third of the way up with stuff, because while the eggs are cooking they rise in the mug almost to the top of the mug. We want this to be quick,  we don’t wanna be washing the microwave and the kitchen after cooking two eggs! ;)

I paired my eggs with a VitaTop cranberry muffin. I used some ketchup too. It was pretty good for a total of 3 minutes microwave cooking time (2min for eggs and 1 min for muffin top).

Next time I may add other fun stuff to my eggs. I want to try it with sausage, or ham, chopped veggies,  parm cheese, hash browns… The possibilities are endless! :)

Banana Bread Oatmeal Protein Pancakes

Hello, everyone!  :)

There is no better way to start the morning with a hot batch of Banana Bread Pancakes, right? ;)

Let me just give you the recipe, then you know what to do!

Banana Bread Oatmeal Protein Pancakes

Ingredients:

1 cup oats
1 container vanilla greek yogurt (6oz.)
1 ripe banana, mashed
1/4 cup honey
1 tsp baking soda
Pinch of salt

Directions:

Mix all wet ingredients together.  Add the dry ingredients.  Mix well together.  Scoop out 1/4 cup of the batter and cook it like you would regular pancakes.

I am so excited,  I finally got my first Ipsy bag! I was on their waiting list for a while, but now I am in the game too! ;)

I heard about Ipsy from a friend of mine. I decided that $10 for 5-6 beauty items (sample size and full size) is well worth the money.

I had to answer a bunch of questions at sign up. All these questions help the company to get to know your makeup preferences. According to the answers they send you the beauty products. I watched many videos on YouTube about the Ipsy bags and it seems like people like them a lot. They usually get 5-6 items, either sample size or full size.

Gluten Free Banana Walnut Date Surprise Muffins

In this chilly Chicago evening I want to offer you a nice and warm muffin recipe. I made those from scratch the other day. I wanted something warm and gooey, and crunchy,  and sweet! I know I have issues! ;)

Well,  I have a bunch of different types of flours at home. I have chickpea flour, almond meal, plantain flour, potato flour, corn starch, coconut flakes…. The list goes on and on! But what do I do with all these flours? They don’t behave like regular wheat flour. They don’t have gluten. My regular muffins always turn out dry, lumpy, hard, ugly! Haha! ;)

So I decided to mix some of those flours in my own way, my own proportions. They turned out really good. They were soft, moist, chewy, crunchy, sweet and I loved them. My father is always sceptical about gluten free stuff, but he ate like 2-3 of them and didn’t even notice.

I also added a little surprise inside each one of them. I put 1/2 date inside in the middle of each muffin. This little touch gave them such a nice texture.

Let me show you some of the ingredients I used and where you can find them for cheap.

COCONUT MILK POWDER

I bought this is a small indian food store.  You know those little stores with strange names. I see them all the time, but I never had the guts to go in there to see what they sell. This changed quickly when I see how much cheaper they are. Usually they have good stuff for less. Like a bag of almond flour could cost about $10-$12 online or in the natural food stores, there it would cost around $5! Sweet! :)

FUFU FLOUR- PLANTAIN FLOUR

I got this gem in the hispanic aisle in my international food market. It is called Fiesta Market. I am sure that with a little research you can find similar stuff in your grocery stores. By the way this is a hobby of mine- to roam around different stores and markets for affordable healthy foods and ingredients.

ALMOND MEAL

I bought this in my local Trader Joe’s. It is not expensive.  I use it in many recipes.

GF BANANA WALNUT DATE SURPRISE MUFFINS

Ingredients:

1/2 cup coconut milk powder
1/4 cup plantain flour
1/2 cup almond meal
1/2 cup stevia powder
1 teaspoon baking soda
1/2 cup walnuts, chopped
pinch of salt
2 eggs
1 medium banana, mashed
1/2 cup vanilla Greek yogurt
10 dates (3- cut in half; 7-chopped)

Directions:

1) Mix the first seven ingredients in a big bowl.
2) Mix eggs, banana and yogurt in a separate bowl.
3) Put the wet ingredients into the dry ingredients and mix, until well incorporated.
4) Add the chopped dates and mix them into the batter.
5) This batter makes 6 muffins. Spoon the batter into the muffin pan half way up. Put half of a date in the middle, and then top with another spoonful of the batter.

6) Bake at 350F.
7) Cool and enjoy! :)

Gluten Free Apple Crisp In A Mug

Hello there!
Long time no see!

Today I got to enjoy homemade Apple Crisp in my very own coffee mug!
It tastes devine! It is legit! :)

After watching some videos on YouTube I decide to try to mix it up myself! I am a huge Apple Pie fan so I have pretty high standards how it should taste like. This creation of mine stands up to all! I should’ve name it Apple Pie in a mug.

Go in the kitchen and make it NOW!

GLUTEN FREE APPLE CRISP

1 medium apple
1/3 lemon (juice+ zest)
1 tablespoon butter
2 teaspoons sugar
cinnamon
2 tablespoons almond meal
2 tablespoons old fashioned oats
1 tablespoons coconut flakes, unsweetened

Directions:
1) Peel and cut up the apple. Set aside.

2) In a big mug put the butter and sugar, and microwave for about 1 min.

3) Zest and juice 1/3 lemon in the mug.

4) Add the apples to the butter mixture, sprinkle some cinnamon. Stir well. Set aside. It smell good already!

5) In a different cup or bowl mix together oats, coconut flakes, and almond meal. Add this dry mix to the mug, covering the apples.

6) Don’t stir. Just put the mug in the microwave for 2 min.

7) Let it cool for few min because IT IS SUPER HOT.

8) ENJOY OUT OF THE MUG OR SERVED IN A BOWL. MAYBE ADD YOUR FAVORITE ICE CREAM OR WHIP CREAM. ;)

*For more crunchy texture you can add nuts or granola clusters.*

I added a spoonful of light whip cream. It tastes amazing. This Apple crisp is one of my new fall favorite comfort treats.

Coconut PB2 Protein Granola

I am out of my favorite granola! Ugh!

Trader Joe’s is in my plans on of these days but what do I do until then?

I found a solution last night!
I made myself Coconut and PB2 Protein Granola. Lately I’ve been eating it with a cup of greek yogurt for breakfast.  It never gets old in my opinion.

Coconut PB2 Protein Granola

1 cup rolled oats
1/4 cup shredded coconut, unsweetened
1/4 dried cranberries, no added sugar
1/2 scoop vanilla protein powder
2 tablespoons PB2 powder
2 tablespoons pumpkin seeds (pepitas)
1 tablespoon chia seeds
1 tablespoon flax seeds
2 tablespoons coconut oil
3 tablespoons sugar free pancake syrup (I was out of honey :( )

Directions:
1) Mix all of the dry ingredients in a big bowl. Stirr well.
2) Mix all of the wet ingredients in a smaller bowl. Stirr well until the mixture is nice and smooth.
3) Put the wet ingredients into the dry ingredients. Mix everything together intil well incorporated.
4) Spread the mixture on a cookie sheet or on a piece of illuminum foil coated with some cooking spray.
5) Bake it on 350 F, for about 10- 15 min, stirring occasionally.
6) When done, cool it off before enjoying!  :)

Makes: 10 servings. 
One serving in 1/4 cup.
It comes to about 125 calories per 1/4 cup.

Baked Tilapia With Garlic Tomato Sauce

Hello!
Tonight on the menu we have Baked Tilapia with Garlic Tomato Sauce.  It sounds so fancy, doesn’t it? But it is super simple to make and it taste great. It is also clean lean protein source and it is a muscle building friendly dish.

I used a mix of caned diced tomatos and tomato sauce. This is a low sugar version. I can use a regular spaghetti  tomato sause, but sometimes it’s got from 8g to 10g of sugar per serving. So using the canned tomatoes version definitely saves me from eating all this sugar. Anywho! Let get cooking!  ;)

Baked Tilapia With Tomato Garlic Sauce

6-8 tilapia fillets
2 cups canned tomato sauce
2 garlic cloves, minced
2 T all purpose seasoning (may include salt, dehydrated veggies, spices)
black pepper

Directions:

1) Preheat the oven to 400 F.
2) In a big baking dish, spray some cooking spay. Place the tilapia in the baking dish.
3) Season the fish with black pepper and all purpose seasoning.
4) Spread the tomato sauce over the fish. Add the minced garlic on top.

**Do not add additional salt, because usually these all purpose seasoning contain salt already.**

5) Bake until done. The sauce shouldn’t be too liquidy.

You will smell it when it’s ready. It smells delicious! 

6) Enjoy!

No Bake PB Oatmeal Balls

My day started off on a good note because I made some No Bake PB Oatmeal Balls. I got the recipe from Lindsay’s blog,  theleangreenbean.com.

The original recipe includes chocolate chips too but I didn’t have any. Bummer! :(

So I decided to share this delicious recipe with you! Here it goes.

No Bake PB Oatmeal Balls

1 1/2 cup oats
1/2 cup dried raisins (crasins)
2 tablespoons chia seeds
1/4 cup natural peanut butter
1/4 cup honey

Mix all ingredients together in a large bowl.  Shape out about 14 balls. Let the balls chill in the fridge for a while. Enjoy!

They are delicious!  Chewy, sweet, filling!  They taste like high end granola balls that you can buy in an expensive natural foods market. But this recipe is cheap and it taste really good! :) It takes just a few minutes to make and you will be making many trips back to your kitchen all day, until they are all gone! Haha! At least that’s what I’m doing so far! ;-)

Weird But Good Food Combos ???

So this incredible food combo got me thinking about all of the weird food combos that I enjoy eating sometimes.  Then I went online to check what other people are weirdly putting together. I thought that my combos are strange, but wait until you see what everyone else is gorging on! ;)

Let’s start with some of my favorite weird combinations. Some of them I eat because my parents or grandparents eat. Other ones I created myself and believe that they can be featured in some fancy restaurant one day. Haha! ;)

■ Pound cake + Cucumbers

Don’t say no until you try it! I know it sounds crazy and gross,  but it is really good. I liked it with marbled pound cake too. Yum! ;)

■ Watermelon + Feta Cheese

Sometimes I see this combination incorporated in Meditarenian style salads.  I like it just like that as a snack or sometimes as my whole meal, because I just can’t stop eating. Delicious! 

■ Halva + Bread

This combination is just epic. My father and grandparents used to eat it, so I eat it too. Not very often though, at all! :)

■ Bread + Sugar + Butter

It tastes good! Super unhealthy I guess, but good! :)

Ok now let’s see what the rest of the world enjoys when “no one is around”! Haha! ;)
I think some of these combos are just outrageous in my opinion, but I am willing to try them sometimes.
